Coffee doesn't go off like milk — it fades like a photograph. Here's what actually preserves it, and what's marketing.
The enemies, in order
Oxygen first, then time, then heat and light. Ground coffee loses its aromatics within days; whole beans hold on for weeks. That ranking decides everything below.
What works
Buy whole beans, grind right before brewing — this single habit outweighs every container. Store beans in a genuinely airtight, opaque container at room temperature. Vacuum canisters help most for the second half of a bag, when headspace air grows.
What doesn't
The fridge (condensation and odours), the freezer for daily-use beans (thaw cycles), decorative glass jars on a sunny shelf (light + oxygen), and the folded-over bag with a clip (mostly hope).
The date dial habit
Write or dial the roast date when you open a bag. Most coffee is best 5 days to 5 weeks off roast — knowing where you are in that window explains more bad cups than any gear ever will.
